Hello! My Name is Anny O’Neill.
I am mother to four beautiful children & the founder & director of “The Art of Health” clinics, in Galway and Kildare.
I started out my professional career in the field of medicine over 24 years ago as a clinical nurse specialist, and tutor in intensive care at Brighton University, UK. I went on to train in medical herbalism, nutrition, detoxification, colon hydrotherapy & iridology.
More recently, I have qualified as a bio-magnetic pair-therapist, and currently I am deepening my practice even further with an in-depth course in quantum health - lots more to come on this!
While I work with a broad range of health challenges, one of my specific passions is digestive health and the treatment of chronic degenerative disease. I am also a detox specialist with a focus on cleansing and nourishing the body, mind and emotions.
Sooooooo - I am absolutely delighted to share with you all my bread recipe for digestive health!
But first, let me introduce you to my little helper: my son James, aged 7.
Our bread recipe has been perfected over a 20-year period of research for optimal digestive health. It is flour, dairy & gluten-free, with high plant protein and is exceptionally nutritious, full of love, and tasty too… Seems like you can have your bread and eat it, and James will testify!
It’s simple to make & ideal for batch cooking and freezing. Trust me!
Ingredients: Makes enough for 2 x 1b tin loaves.
270 g Sunflower Seeds.
180g Whole Golden Flax Seed.
130g Hazelnuts (or Pecans/ Walnuts / or Nut of Choice). Alternatively, use more seeds instead of nuts.
290g Gluten Free Oats or Spelt Flakes.
4 Tablespoons Chia Seeds.
8 Tablespoons Psyllium Husks.
2 Teaspoons Salt Pink Himalayan Salt or Celtic Sea Salt.
6 Tablespoons of Coconut Oil (melt in the water below for ease).
700 Mils Hot Water (above hot enough to dissolve coconut oil).
Additional Flavouring:
Both options pair with sweet or savoury: Choose either –
Add 1 teaspoon of cinnamon and 100g crystalized ginger - or…
Add 4 large sprigs of fresh rosemary pines, finely chopped, with one extra teaspoon of salt either Himalayan or Celtic rose salt.
METHOD
In a large bowel combine and mix all dry ingredients.
In a measuring pyrex jug combine warm water and add coconut oil.
Combine wet into dry ingredients.
Immediately transfer into 2 x 1lb tin loafs, ideally silicone if not, lined with greaseproof paper.
Leave to set for 2 hours minimum.
Ideally overnight.
After Setting:
Preheat oven to 170 Degrees Celsius.
Bake for 20 minutes.
Remove from tin, bake for another 30 minutes.
Cool.
Slice the next day.
And, freeze in 2 slice batches
Toast from frozen and enjoy.

This highly nutritious bread supports less mucus in the body. Why is this important?
Excess mucus is what can really slow down the body’s ability to self-cleanse. Symptoms of a compromised elimination may include: sinus and mucous issues, dull skin, constipation, eczema, generally not feeling optimal health; plus a host of other ails. This bread recipe is full of seeds and nuts, which are a great source of energy. This is because they release energy slowly, thus resulting in longer lasting energy throughout the day - with the added benefit of improving mood.
But…. What really makes this bread prescriptive? Drum roll!
Psyllium husks.
Psyllium husks are a natural binding agent, as well as having the power to attract & absorb toxins. Bowels need fibre to wipe up all accumulated debris, & psyllium husks have amazing properties that can cleanse & regulate your bowels due to their high quality fibre content.
Importantly this bread is not only gorgeous, but delicious too - my children love it!
